We live and operate in Hong Kong where (almost) everything is imported. It is the nature of where we operate that pose the most challenges on this journey. While we acknowledge these challenges, we are not deterred to do what we can, to the best of our abilities. Our actions are not perfect, but we hope that the choices we make contribute to the solution and not the problem. We strive to reduce negative impact of our activities and carefully consider the needs of our environment and community, making positive influences wherever we can. Our Commitment

Our Ingredients
We have set out a charter that outlines and guides the sourcing of our ingredients. High food quality is dependent on the processes undertaken, which is why we prioritise farms and suppliers that have responsible and transparent practices. Our supplier selection process involves an analysis of their operations where we discuss their practices, affiliations and recognized certifications and any other initiatives in place. By responsibly procuring and ensuring full traceability in our supply chain, we ensure sustainability is at the heart of our operations. We are also committed to sourcing as much as we can locally within Hong Kong and the Guandong Province, and only from the Asia-Pacific region when that is not possible.
We pledge to not purchase any endangered species or animal proteins from battery cage farms. We care that all animals are grown and raised with access to sunlight, and are cared for with respect by people who echo our values in sustainability. This includes, but are not limited to, ensuring that all animals are traceable, and are hormone, antibiotic and chemical free. We only source fish from aquaculture with preference for Best Aquaculture Practices (BAP) and Aquaculture Stewardship Council (ASC) certified farms to ensure that we do not feature any fish caught using methods with negative environmental impact. In addition, we are members of the Hong Kong Sustainable Seafood Coalition (HKSSC) and are guided by the WWF Seafood Guide.

Responsible waste management
We believe that waste is a resource, however, we should first and foremost be preventing the generation of waste. We look into our waste streams, analyze them and identify channels where reductions can be made on a monthly basis. With this data, it allows us to understand our practices and develop action plans to reduce our waste. This information is shared openly with all employees to increase awareness and promote further reduction. Unavoidable, non-organic waste is separated and recycled into metal, plastics, glass, paper & cardboard, Styrofoam etc. All organic waste, which includes both food waste and our compostable packaging, is processed and composted. Our methods are not perfect and we are constantly on the look out for new and innovative ideas. Reach out to us if you have an idea.

Carbon-free delivery
We believe food should not be delivered on the back of a motorcycle, hence, delivery within our ecosystems are delivered on foot, without using any more carbon. In addition, we are conscious of the packaging that is associated with having food to go and are working on solutions to implement circular packaging throughout our ecosystem and are constantly looking for different alternatives.


Mindful material selection
At the front of house, 90% of all our to go packaging is certified home compostable. The remaining items are soup cups that are made from paper and lined with PLA which is unfortunately unavoidable as we have yet to find a feasible solution. However this does not deter us from seeking out alternatives and exploring other innovative solutions. We set an initial goal to include a minimum 20% of upcycled or recycled materials in our interior design. We have surpassed that goal by using recycled circuit boards in our bench backs, food waste in our table tops, recycled plastic chairs, reclaimed wood table tops, among other items.
In the back of house, our culinary team has succesfully eliminated 100% of all single use petrochemical plastics from our kitchens. These items have been replaced with resuables and plant-based alternatives.
